The motto is "The greatness of food lies in its simplicity". The emphasis is on the freshest of regional produce.

Inspiration is drawn from both European and Asian countries, recipes of bygone days adapted to local produce, the Australian lifestyle and climate.

Casuarina is perhaps best known and loved for its flambés, they are the speciality of the house. Dishes featured include Thai style curries, Cajun Jambalayas, Asian and Mediterranean Seafood combinations. Flambé desserts including Crêpe Suzette and Banana Coruba.
The restaurant is an elegant fine dining experience.

The adjacent Garden Court, in colourings of soft cream with French doors which open out to the garden.
